That is how it is. If you wait, shop for every ingredient and then do everything just right, something won’t turn out. Or a ripe tomato is no where to be found. Maybe the mushrooms are turning brown. Whatever the case, it is so much better to understand the basics of a recipe, then plan accordingly. Everyone has different tastes and preferences. 

I made this plate from stuff in the fridge. I had been away for a week and the last of the tomatoes were saved in the fridge. Some cured meats were kicking around. A few last cloves of roasted garlic. Mixed olives. Leftover bocconcini from making pizza. A few springs of fresh thyme. A drizzle of olive oil. Malden salt and freshly ground pepper. I could have found more, but the plate was nicely full.

If it is true that “you first eat with your eyes”, this plate does the trick. I think there could be any number of ways to create this. Here are a few Italian guidelines:

  • Prosciutto or other cured ham
  • Salami
  • Cheese
  • Olives, marinated artichokes, roasted red peppers
  • Pickled vegetables
  • Tomatoes
  • Seafood
  • Melon, fresh figs
